Roasted Red Pepper & Goat Cheese Shrimp Pasta

A couple weeks ago I seen this posted on pinterest and though OMG I gotta try that, it looks so good, the recipe was fairly simple and we all know, I like simple. It looked so good in the picture, but sometimes things that look good, arent. I made it just how LaurensLatest  described to and in my opinion, it was a little bland. Me, growing up not far from New Orleans, Said this needs some  Kick, Boom, . So I remade the recipe, and made it my own, and I will say this is SOOOOOoooooo Good! Heres the recipe.

 

Here’s what you will need:

2 Whole red bell peppers
3 tablespoons olive oil
1 yellow onion diced
1 cup fat free Half & Half
4oz package of garlic & herb goat cheese
2 cloves garlic, minced
3 tablespoons cajun seasoning
1 cup grated parigiano reggiano (Parmesan) cheese
1 lb raw shrimp
1/2 lb linguine cooked al dente (I used whole grain)

First preheat your oven to 500.

place the whole red peppers onto a cooking pan (I lined it with foil), and place in preheated oven.

Cook for about 15-25 mins, until they look like their burnt & charred (their not burnt I promise) Cover and let cool (they are SUPER HOT right now)

 

Now saute onion & garlic in olive oil, until tender, then add shrimp and cook shrimp until pink.  ( I cooked with a little white wine, Basil, & black pepper, not too much though!)

Stir in Half & Half, Goat cheese, & Cajun Seasoning. Add in Parmesan cheese & stir until melted.

If peppers are cooled, cut the stem & membrane off, & peel the skin off. slice into quaters & wash off any seeds.

place into food processor and puree.

mix in red peppers, sauce, & noodles and simmer.

Tip Alert: if you want it a little sweeter vs spicy, use less or no cajun seasoning, Red peppers are actually sweet.
